Four hours later, the bao turned out fairly well. We made several dozen and still have a little dough left over. Sam swears they're dead on, but I think they lack a lot of the puff and moisture that those at Chau Chow City have. I'm also having issues with sealing them - I end up with a ton of dough at the closure, which usually started splitting open. Perhaps there are a few tips on Chinese cooking websites. I'll have to keep looking.
